Five-spice Chicken with Garlic

and Spring Onions

You can also add 60 g (½ cup) fresh or frozen green peas after stir-frying the chicken for a minute or two. A sprinkling of minced fresh coriander leaves on the finished dish goes very well with these flavors.

350 g (12 oz) chicken breast, cubed

3 tablespoons sesame oil

5–6 cloves garlic, minced

2 spring onions, cut into sections

Marinade

2 tablespoons rice wine

1 tablespoon soy sauce

1 teaspoon sesame oil

1 teaspoon sugar

½ teaspoon salt

2 teaspoons five spice powder

1 teaspoon cornstarch dissolved in 1 tablespoon water
